1. Cook the onion until soft. Add the garlic
and
nduja and cook for 3 minutes.

2. Add the beef mince and cook on a high heat until brown.

3. Add chopped tomatoes, red wine, beef stock, basil and dried oregano and simmer.

4. Make the mascarpone béchamel sauce. Season with salt, pepper and nutmeg.

6. Cut the mozzarella into thin slices, grate the parmesan and chop the kale.

7. Once the eat sauce has reduced, add the kale and cook for 5-10 minutes.

8. Assemble the lasagne by adding meat sauce, bechamel sauce then cheese in layers.

9. Cook the lasagna in the oven for 40 minutes. Leave to cool for 15 mins before serving.
Serve with a green side salad and enjoy!
