Ingredients list

– Butternut squash  - Oil  - Onion  - Green chillies - Ginger – Garlic  – Curry powder – Garam masala – Ground cumin – Turmeric – Vegetable stock – Tomato puree – Chickpeas – Spinach

Step 1

Drizzle the squash with olive oil, add salt and bake in the oven or air fryer.

Step 2

Fry the onion, garlic and ginger for around 5 minutes until the onion is translucent.

Step 3

Toast the peanuts for a few minutes, shaking the pan regularly to ensure they cook evenly. Set aside when done.

Step 4

Season and add vegetable stock, tomato puree, spinach, and chickpeas and simmer. Then add the chickpeas and sour cream.

Final step

Add the roasted squash. Top with fresh coriander and toasted peanuts. Serve with rice or naan bread.
