Ingredients list

- Butter – Raw shrimp/prawns – Squid ink pasta – Garlic – White wine – Anchovy paste – Tomato puree – Squid ink – Fish stock – Lemon juice and zest – Samphire/sea beans

Step 1

Cook the samphire in butter for a few minutes until tender and set aside.

Step 2

Add the shrimp/prawnsand cook for a few minutes until opaque and remove from the pan and set aside.

Step 3

Fry the garlic until fragrant. Pour in the white wineand simmer for a few minutes until reduced by half.

Step 4

Add the tomato puree, anchovy paste, squid ink and fish stock and simmer for 10 minutes.

Final step

Add the lemon juice and zest, prawns and samphire to the sauce. Toss the cooked pasta in the sauce and serve immediately.
