Ingredients list

- Onion – Butter – Veg or Chicken Stock – Broccoli – Blue Stilton

Step 1

Saute the onion in butter on a medium heat for a few minutes until soft and translucent.

Step 2

Simmer the broccoli florets and stalks in the stock for around 20 minutes until tender

Step 3

Using a stick or countertop blender, puree the soup until smooth and pour it back into the pan

Final step

Stir in the Stilton on a low heat and add salt and pepper to taste then serve immediately
