Ingredients list

Galette ingredients: – Buckwheat flour – Milk  – Water  – Egg  – Sea or kosher salt – Melted unsalted butter  – Ground nutmeg  Filling: – 6 eggs  – Spinach  – Gruyere or other hard cheese

Step 1

Place all the batter ingredients in a medium to large bowl and whisk until smooth using an electric or manual whisk.

Step 2

Cooke the galettes and add the fillings when they begin to set.

Step 3

Fold each side into the middle, leaving the egg visible with no more than 2 inches of sides folded inwards.

Final step

Serve immediately and repeat the with the remaining batter.
