Ingredients list

- Plain flour – Unsalted butter – Icing suger – Egg yolk – Soft brown sugar – Double cream – Ingredient – Vanilla extract – Salt/Sea salt

Step 1

Rub the butter and sugar together with your fingers in a mixing bowl until you get a breadcrumb-like texture.

Step 2

Add icing sugar, salt, egg yolk and water a little at a time. Form into a ball and chill in the fridge.

Step 3

Roll out the dough to 4mm/1/4 inch thick, cut into circles and place into tartlet cases or a tart or muffin tin.

Step 4

Prick the bottom of each tartlet with a fork and bake at 180°C or 350°F for 15-20 minutes until they begin to brown.

Step 5

Stir the sugar, flour and cream into melted butter on medium heat. Remove when the sauce thickens and add the vanilla and salt.

Final step

Spoon the warm butterscotch filling into the tartlet cases and place in the fridge to chill for at least 3 hours.
