- Parsnips – Carrots – Olive oil – Salt – Onion – Garlic – Honey – Curry powder – Chilli powder – Lime juice – Veg stock – Coconut milk – Coriander/cilantro

Step 1

Roast the carrots and parsnips in the oven or air fryer.

Step 2

Place a Dutch oven or large pan on a medium heat and fry the onions and garlic until the onion is translucent.

Step 2

Simmer the carrots and parsnips in stock, and coconut milk, seasoned with curry and chilli powder.

Final step

Blend the soup until smooth.. Then stir in the lime juice and serve topped with chopped fresh coriander/cilantro.
