– Tagliatelle  – Zucchini/courgette  - mushrooms  – Garlic  – Light crème fraîche  – Veg stock – Lemon juice + zest – Balsamic vinegar  – Black pepper – Chopped parsley leaves to serve

Step 2

Grate the zucchini/courgette and use a clean tea towel to ring out the excess moisture.

Step 3

Fry the mushrooms in melted butter until they begin to brown. Then add the grated zucchini and garlic.

Add the crème fraîche, then pour on the stock. Let the sauce simmer for a few more minutes and add the lemon juice and zest.

Toss the cooked pasta in the sauce. Serve immediately topped with fresh parsley and freshly ground black pepper.
