Ingredients list

- Butter – Onions – Carrots – Vegetable Stock – Ground Coriander – Black Pepper – Salt – Lime Juice – Cream/Creme fraîche – Fresh Coriander – Chilli Flakes

Step 1

Fry the onions in butter on a medium heat for a few minutes until soft and translucent

Step 2

Pour in the stock, add the carrots and simmer for about 20 minutes until soft

Step 3

Use a hand or standing blender to puree the soup until smooth

Final step

Stir in the ground coriander, salt, pepper, and a squeeze of lime juice. Add your chosen toppings and serve
