1. Fry the garlic, red chilli and ginger in sesame oil for a couple of minutes until fragrant.

2. Simmer with the chicken stock, soy sauce, sake and sweet chilli sauce for 10 minutes.

3. Cook the noodles then run them under cold water after draining to prevent them from sticking.

4. Add the pak choi to the broth for a couple of minutes until just tender and set aside when done.
