1. Cook the onions and red peppers on a low heat until they are soft and caramelised.

2. Place a pan on a medium/high heat, add the pine nuts and toast for a few minutes until they start to brown.

3. Beat the eggs in a jug or bowl and add the milk, salt and pepper.

4. Spoon the onions and peppers into a pie dish. Pour on the egg and milk mixture and top with goats cheese and pine nuts.

5. Place the quiche on a high shelf in your oven and bake for 30 minutes at 180C or 300F.

Serve with a tasty side salad & enjoy.
