1. Lightly crush the fennel seeds in a pestle and mortar.

2. Place a frying pan on a medium to high heat, add the pine nuts and toast them until they begin to brown.

3. Fry the gnocchi in butter and olive oil  until brown, turning to ensure they are cooked on both sides.

4. Toast the fennel seeds, add garlic and chilli, then add tomato and spinach.

5. Add the gnocchi back in the pan and toss in the heat for a minute or two. 

Serve with topped with toasted pine nuts and freshly ground black pepper.
