Chicken thighs – Sea or kosher salt – Ground black pepper – Ground coriander – Olive, groundnut or canola oil – Freekeh – Pomegranate seeds – Cucumber – Feta – Pistachio nuts – Fresh mint – Lemon juice – Olive oil

Fry the seasoned chicken thigh pieces in hot oil for a few minutes until they begin to brown.
