Ingredients list

- Mackerel fillets – Sea or kosher salt – Sake – Neutral oil – Mirin – Sugar – Shredded daikon – Lemon, lime or yuzo – Steamed green beans – Sushi rice – Sesame seeds

Step 1

Prepare the optional soy and mirin sauce with the soy sauce, mirin, sugar, and water.

Step 2

Pour sake over the fillets and dry them with kitchen paper.

Step 3

Sprinkle both sides of the mackerel with salt and set aside for 20 minutes.

Final step

Grill skin side down for two minutes. Turn over and cook until the skin crisps up. Serve immediately.
