Ingredients list

- Onion – Garlic – Scotch bonnet chillies – Red peppers – Cumin, paprika, pepper – Chopped tomatoes  – Veg stock – Black and pinto beans – Corn – Lime juice – Grated cheese – Sour cream – Cilantro/coriander - Jalapenos - Tabasco sauce

Step 1

Fry the onions and red peppers until softened then add the garlic.

Step 2

Add the cumin, paprika, cayenne pepper, Worcester sauce, chopped tomatoes, veg stock and beans and simmer for 10 minutes.

Step 3

Optional: For a thicker soup, puree half of the soup using a blender.

Final step

Add the corn and lime juice. Serve immediately or leave to cool and refrigerate or freeze to enjoy later.
