Perfectly Soft and Chewy Cookies

Ingredients list

- Cadbury Mini Eggs – Unsalted Butter  – Golden Granulated Sugar – Egg – Vanilla Essence – Plain Flour – Baking Powder – Sea Salt – Chocolate Chips

Step 1

 Place the Mini Eggs in a bag, seal and bash with a rolling pin to make smaller pieces

Step 2

Cream the butter and sugar together using a whisk or stand mixer. Then mix in the egg and vanilla essence.

Step 3

Mix the flour, baking powder and salt, pour into the wet ingredients and combine into cookie dough.

Step 4

Gently fold in the crushed Mini Eggs, chocolate chips (and optional butterscotch chips) by hand.

Step 5

Form the cookie dough into 8 even-sized balls and press a few larger Mini Egg chunks into each cookie.

 Step 6

Bake for 12 minutes at 200°C or 390°F. Remove and leave to cool then move them to a rack to cool.

Final step

While the cookies are warm place a cutter over each one and swirl it around to neaten up the edges
