– Olive oil – Garlic  –  Harissa paste  –  Ground cuminChopped tomatoes – Salt – Eggs

Fry the garlic for 1-2 minutes until fragrant. Then add the cumin and harissa paste.

Pour in the chopped tomatoes and simmer on a low to medium heat for 10 minutes to allow them to reduce.

Add eggs and simmer on a medium heat until the whites are just set, but the yolks are still runny.

Final step

Serve immediately, topped with fresh parsley and black pepper.
