Ingredients list

- Dashi or veg stock – Miso paste – Soy sauce – Butter – Mushrooms – Garlic – Cooked rice – Eggs – Scallions

Step 1

Fry the mushrooms until slightly brown, reduce the heat, add the garlic, fry for a couple more minutes until fragrant and set aside.

Step 2

Add the dashi or stock on a medium heat until it starts to boil. Take the pan off the heat, whisk in the miso paste and add a little soy sauce.

Step 3

Stir in the mushrooms and serve immediately.

Final step

Add rice, poached eggs and green onions/scallions if desired.
