Ingredients list

- Cooked brown rice – Mushrooms – Butter – Garlic – Spinach leaves – Feta – Pickled beets – Crunchy onions – Tahini paste – Rice vinegar – Sesame oil – Garlic powder – Sugar - Water

Step 1

Make the dressing by mixing the miso paste, tahini, rice vinegar, sesame oil, garlic powder, sugar and water.

Step 2

Fry the mushrooms until they begin to brown and add the garlic. Add the spinach to the pan, cook until it begins to wilt and set aside.

Final step

Add the mushrooms, spinach, feta, and pickled beets to the rice. Serve with tahini miso dressing and top with crunchy spring onions.
