Ingredients list

- Chicken stock – Garlic – Chillies – Ginger and sugar – Soy and fish sauces – Peppercorns – Star anise – Cloves and cinnamon – Sea or kosher salt – Rice noodles – Lime juice – Red peppers – King prawns - Cilantro/Coriander

Step 1

Butterfly and devein the prawns.

Step 2

Season the stock and simmer for 10 minutes.

Step 3

Cook the rice noodles while the broth simmers, drain and run under cold water to prevent them from sticking and cooking further.

Step 4

Strain the broth into the pan used to cook the noodles.

Step 5

Add the lime juice, boil then simmer with the peppers for 5 minutes. Add the prawns and cook for a further 2-3 minutes.

Final step

Divide the noodles between the bowls, then ladle in the broth with prawns and peppers. Finish with fresh coriander.
