Ingredients list

– Olive oil – Onion – GarlicAlborio risotto rice – White wine – Vegetable stock Pumpkin puree – ParmesanBalsamic vinegarSmoked salt – Black pepper – Butter – Mushrooms  – Sage leaves 

Step x

Fry the onion until translucent and add the garlic. Add the risotto rice and pour in the white wine and cook for a few more minutes.

Step x

Pour in the stock little by little, and stir regularly. Simmer for around 20 minutes until the rice is al dente.

Step x

Fry the mushrooms for a few minutes. Then fry the sage leaves until they become crispy.

Final step

When the risotto rice is cooked add the pumpkin puree, balsamic vinegar, parmesan, salt and pepper and stir until incorporated.
