Ingredients list

- Pine nuts – Roasted red peppers  – Sundried tomatoes – Olive oil – Basil leaves – Vinegar – Tomato puree – Parmesan or Pecorino – Garlic powder – Black pepper – single cream – Fresh parsley – Salt - Pasta of your choice

Step 1

Toast the pine nuts on a medium to high heat for a few minutes until they begin to brown and set them aside.

Step 2

Use a food processor or pestle and mortar to combine all the pesto ingredients.

Step 3

Bring a pan of generously salted water to boil and cook the pasta according to packet instructions.

Final step

Add the pesto sauce and cream to the pasta. Serve immediately topped with parsley, black pepper and grated Parmesan.
