Ingredients list

- Mushrooms – Butter – Onion – Garlic – White wine – Risotto rice – Veg or chicken stock – Balsamic vinegar – Heavy/double cream – Black pepper – Salt – Fresh parsley

Step 1

Fry the mushrooms in butter on a medium to high heat until they begin to brown and set aside.

Step 2

Sauté the onions until soft and translucent. Then add the garlic and cook for a minute or two until fragrant.

Step 3

Simmer the rice in reduced white wine and toast until the grains become hot.

Step 4

Add the stock slowly, a ladle at a time. Continue until the rice is cooked to al dente.

Final step

Stir in 3/4 of the mushrooms. Top with the remaining mushrooms, chopped parsley and more grated Parmesan and serve.
