Ingredients list

- Fresh spinach leaves – Fresh basil leaves – Parmesan – Pouring cream – Lemon zest and juice – Olive oil – Garlic cloves – Risotto rice – Vegetable broth/stock – Salt & pepper to taste – Sautéed mushrooms – Toasted nuts – Burrata

Step 1

Blend the spinach, basil, Parmesan, cream, and lemon until smooth.

Step 2

Fry the garlic for a minute until fragrant. Add the rice and toast until the grains are hot to touch.

Step 3

Gradually add hot vegetable stock, stirring continuously. Continue until the rice is cooked.

Final step

Remove from the heat and stir in the blended spinach mixture. Add salt and pepper to taste. Serve immediately.
