Step 1

Prepare the dressing by whisking together the olive oil, balsamic vinegar, honey, and mustard in a small jug or bowl.

Add the tomatoes and Parmesan shavings to the rocket, reserving a few shavings to place on top of the dressed salad.

Final step

Pour the dressing over the salad and gently toss everything together. Top with the reserved Parmesan shavings and serve
