Ingredients list

- Salmon fillets – Puff pastry – Butter – Garlic – Spinach – Egg – Basil leaves – Feta – Lemon zest – Black pepper (to taste)

Step 1

Saute the garlic in melted butter over a medium heat.

Step 2

Add the spinach and cook for a few minutes until wilted.

Step 3

Remove the pan from the heat and stir in the feta, lemon zest, and black pepper.

Step 4

Roll out a sheet of puff pastry on a lightly floured work surface. Spoon on the spinach and feta mixture.

Step 5

Place a salmon fillet in the middle of the pastry portion.

Step 6

Carefully fold the sides of the pastry over the salmon, sealing the edges to create a parcel.

Step 7

Make a few small slits on the top of the pastry parcels to allow steam to escape. Brush the tops of the pastry parcels  with beaten egg.

Final step

Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and the salmon is cooked through.
