Ingredients list

- Soy sauce – Mirin – Sake – Sugar – Salmon fillets – Egg noodles – Spring onions/scallions – Red chillis – Fresh ginger – Garlic – Carrot – Choi sum – Toasted sesame seeds - Neutral oil

Step 1

Mix the soy sauce, mirin, sake, and sugar and set aside. Cook the noodles and run under cold water.

Step 2

Fry the salmon skin side down for a few minutes until the skin is nice and crispy and set aside.

Step 3

Fry the ginger, chilli, spring onions and carrots then add the greens/choi sum and cook until tender.

Final step

Add the cooked noodles to the pan, pour on the sauce, simmer, and reduce, then add the cooked salmon.
