1. Coat the chicken pieces in cornflour. Mix the soy sauce, honey, rice vinegar and water in a jug or bowl. Make the slurry.

2. Place a frying pan on a high heat and add oil. Fry the chicken pieces until they begin to brown and crisp up.

3. Fry the garlic, ginger and chilli for a few minutes until fragrant. Pour on the sauce, thicken with the slurry. Add back the chicken.
Serve immediately with rice and top with the spring onions and sesame seeds.
