Mix soy sauce, oyster sauce, sugar and optional sriracha in a small jug or bowl and set aside.

2. Fry the shrimp in hot sesame oil for a few minutes until they are opaque, then set them aside.

3. Fry the white onions and scallions for a few minutes, with chilli and garlic and add peas.

4. Reduce the pan to a medium heat, pour in the beaten eggs and scramble using chopsticks or a spatula.

5. Add the cooked rice and mix well, pour on the sauce and mix before adding the cooked shrimp.
Serve immediately topped with freshly sliced raw spring scallions.
