- Chorizo – Prawns – Olive oil – Onion – Garlic – Risotto rice – White wine – Black pepper – Chicken stock – Parmesan – Lemon – Fresh parsley – Ingredient
Step 1
Cook the chorizo until it begins to crisp, add the prawns. Cook for 2-3 minutes until opaque. Remove from the pan and set aside.

Add olive oil and fry the onions until translucent. Then add the garlic and cook for a minute or two until fragrant.

Pour in the white wine and simmer until reduced by half. Then add the rice and toast until the grains become hot.

Add the stock a little at a time, allowing it to be absorbed before adding more, until the rice is creamy and cooked to al dente.
