Ingredients list

- Chicken stock powder – Curry powder – Sugar – Soy sauce – Sesame oil – Shaoxing wine – Neutral oil – Chicken thigh – Prawns/shrimp – Onion - Spring onions/Scallions – White cabbage – Carrots – Garlic - Eggs -Cooked long grain rice

Step 1

Mix the curry powder, chicken powder, sugar and pepper in one bowl and the soy sauce, sesame oil and Shaoxing wine in another.

Step 2

Fry the chicken pieces until lightly browned. Then add the prawns/shrimp for 1-2 minutes until they turn opaque.

Step 3

Fry the onions then fry the scallions, carrot and cabbage until tender, add the garlic and cook until fragrant.

Step 4

Add the cooked rice to the pan until hot, add the beaten egg and scramble with a spatula or chopsticks.

Final step

Pour on the sauce, add the chicken and prawns/shrimp and serve immediately, topped with the green parts of the scallions.
