Ingredients list

- Smoked haddock – Spring onions/scallions – Large leeks – Fish stock – Butter – Garlic cloves – Risotto rice – White wine – Lemon juice and zest – Parmesan – Crème fraîche – Ground black pepper – Salt -Fresh Parsley

Step 1

Fry the smoked haddock fillets in melted butter over a medium heat and set aside.

Step 2

Sauté the leeks and spring onions/scallions for a few minutes, then add the garlic and fry for one more minute.

Step 3

Add the rice and toss in the pan for a minute until the grains become hot. Add the wine and simmer until reduced by half.

Step 4

Add the stock, a ladle at a time, and stir constantly until the rice is cooked to al dente.

Final step

Stir in the crème fraîche, Parmesan, pepper, salt to taste and the lemon juice & zest. Add the haddock. Serve with fresh parsley.
