Ingredients list

- Chicken thighs – Soy sauce – Mirin – Ramen noodles – Garlic – Scallions/Spring onions – Ginger – Miso paste – Tahini – Sesame oil & seeds – Soy sauce – Chicken stock

Step 1

Mix mirin, soy sauce and sugar, add the chicken and leave to marinate for 30 minutes or overnight.

Step 2

Fry the chicken for a few minutes, pour in the marinade and leave to simmer until the chicken is cooked through.

Step 3

Fry the garlic, scallions and ginger, then add the miso paste, tahini, sesame oil, soy sauce, chilli oil and sugar.

Step 4

Pour on the chicken stock and simmer for 10 minutes. Meanwhile, cook the noodles.

Final step

Add noodles to each bowl, pour on the broth and top with corn, ramen eggs, sesame seeds and the scallions.
