Ingredients list

– 3 tbsp sunflower seeds – 600g cooked farro  – 300g (or 11oz) strawberries  – ½ red onion  – 200g (or 70z) feta  – 80g (or 30oz) rocket – A handful basil leaves Dressing: – 3 tbsp olive oil – 4 tbsp balsamic  – 1 tbsp honey – 1 tsp mustard

Step 1

Toast the sunflower seeds for a few minutes until they start to brown. Then remove them from the pan and set aside.

Step 3

Place the farro, arugula, strawberries, feta, onion and basil in a salad bowl, pour on the dressing and toss everything together.

Final step

Serve in plates or bowls topped with the toasted sunflower seeds.
