Ingredients list

- 3 courgettes – 1 tbsp Olive Oil – 2 Green Chillies – Lamb Mince – Harissa Paste – Ground Coriander – All Spice – Ground Cinnamon – Cumin – Salt – Freah Parsley – Tahini – Lemon Juice - Water

Step 1

Slice the courgettes in half, remove the seeds and flesh and chop into small pieces and set aside.

Step 2

Brush the inside of each courgette with oil and sprinkle with a little salt. Bake at 200°C for 15 to 20 minutes.

Step 3

Fry the garlic and chilli until fragrant and add the chopped flesh and seeds and fry until tender.

Step 4

Add the lamb mince and fry until brown then add the ground spices, salt, and harissa and cook for a few more minutes.

Step 5

Fill the baked courgette shells with the lamb and courgette mince and drizzle a thin layer of tahini sauce onto each.

Final step

Place the filled courgettes under the grill for around 5 minutes until the tahini topping begins to brown.
