Ingredients list

- Sweet potatoes – Plain flour – Salt – Butter – Grated Parmesan – Ground black pepper

Step 1

Prick each potato a few times with a fork and microwave on high power for 8-10 minutes.

Step 2

Peel the potatoes and mash them, then bring the flour and sweet potato together to form a dough.

Step 3

Form the dough into gnocchi by rolling the dough into ½ inch (1.5cm sausages) and chop into 1 inch (2cm) pieces.

Step 4

Add the gnocchi to boiling salted water. Remove with a strainer when they rise and float to the top.

Final step

Fry the sage leaves in browned butter until the leaves become crispy. Serve with Parmesan and ground black pepper.
