Ingredients list

- Rice – Eggs – Green Beans – Sunflower Oil – Smoked Haddock – Onion – Ginger – Green Chilli – Curry Powder – Sugar – Lime Juice – Chives – Coriander/Cilentro - Yoghurt

Step 1

Cook the rice, boil the eggs for 6-8 minutes and simmer the beans until tender.

Step 2

Fry the smoked haddock pieces for a few minutes until they turn opaque and set aside.

Step 3

Fry the onions until soft, add the green chilli and ginger and stir in the curry powder and sugar.

Final step

Stir the lime juice, haddock, beans and chives into the rice and serve with egg, coriander and yoghurt.
