Ingredients list

- Olive oil - Sweet potato – Onion  – Garlic – Scotch bonnet chillies  – Red peppers  – Ground cumin – Smoked paprika – Chopped tomatoes – Water – Black beans  – Pinto beans  – Sea salt – Lime 

Step 1

Place chopped sweet potato into a roasting dish and add olive oil, and season. Roast for 30 minutes at 200°C or 400°F.

Step 2

Fry the onions for 5 minutes. Add the red peppers, chillies, cumin, paprika and crushed garlic.

Step 2

Pour in the chopped tomatoes and water and simmer. Then add the black beans, pinto beans and sweet potato and simmer for a further 10 minutes.

Final step

Add half of the chilli to a food processor and puree quickly until the chunks are removed but not so the mixture is completely smooth.
