1. Cook the tagliatelle in a large saucepan of salty boiling water until al denté.

2. Grate the zucchini/courgette and use a clean tea towel to ring out the excess moisture.

3. Fry the mushrooms until they begin to brown, reduce the heat, add the grated zucchini and garlic.
