Ingredients list

- Zucchini/courgettes – All purpose/plain flour – Eggs – Scallions/Spring onions – Dill – Salt – Black pepper – Vegetable oil – Yoghurt – Olive oil – Lemon juice – Garlic powder – Sugar

Step 1

Shred the zucchini, place into a bowl, incorporate the salt and set aside for 10 minutes.

Step 2

Combine the yoghurt, olive oil, lemon juice, garlic powder, salt, sugar and ground black pepper in a small bowl.

Step 3

Using a colander squeeze the liquid out of the zucchini, then place on a clean kitchen towel and squeeze again.

Step 4

Add the flour, egg, scallions, dill, salt, and pepper to the shredded zucchini and mix to form a smooth batter.

Final step

Fry  a portion of the batter on each side until golden brown, set aside and repeat with the remaining batter.
