1. Tinned tomatoes
2. Black & Pinto beans
3. Sweet potatoes
4. Red peppers
6. Lime juice
7. Fresh chillies
Peel the sweet potatoes and chop into cubes. Place them into a roasting dish and add olive oil and seasoning. Bake for 30 minutes.
Gently fry the onions for 5 minutes. Add the red peppers, cumin and paprika and fry for another 5 minutes. Then add the crushed garlic
Pour in the chopped tomatoes and 1 cup of water and simmer for 20 minutes. Then add the black beans, pinto beans and sweet potato and simmer for a further 10 minutes.
Add half of the chilli to a food processor and puree quickly. You can also use a potato masher. Skip this step if you prefer a chunky chilli.
