Ingredients list

- White onion – Smoked paprika – Cumin – Cayenne pepper – Garlic clove – Vegetable stock – Corn kernels – Lime juice – Sour cream – Salt and pepper – Olive oil – Neutral oil – Grated cheddar cheese - Coriander/Cilantro - Jalapenos 

Step 1

Mix the corn with olive oil, paprika, cayenne and salt. Bake in the oven at 180C/350F for 10-15 minutes.

Step 2

Fry the onions on a medium to low heat until soft. Then add garlic, smoked paprika, cumin and cayenne pepper.

Step 3

Add corn and vegetable stock to the pan and simmer for 10 minutes then puree in a blender on a high speed.

Step 4

Add the puréed corn soup back to the pan and add sour cream, lime juice, salt and black pepper.

Final step

Ladle into warm soup bowls and top with roasted corn and optional toppings of cheese, jalapeños and cilantro/coriander.
