Chicken Minestrone Soup

A simple and hearty chicken minestrone soup that will warm your body and soul. Requires just 10 simple ingredients.

Ingredients

  • 2 tablespoon olive oil
  • 1 onion chopped
  • 2 sticks celery diced
  • 1 large carrot diced
  • 1 zucchini (optional) diced
  • 1 clove garlic crushed
  • 1 14 oz can chopped tomatoes
  • 2 tablespoon tomato paste (optional) (Note 1)
  • 2 tsp dried oregano
  • 4 cups chicken stock (Note 2)
  • 2 cups pasta (Note 3)
  • 1 14 oz can cannelli beans
  • 2 cups shredded cooked chicken (Note 4)
  • salt and pepper to taste
  • Parmesan to serve (optional)

Instructions

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion, and sauté for about 5-7 minutes, until soft and translucent.
  • Stir in the carrots, celery, zucchini, and garlic, cooking for another 2-3 minutes until fragrant.
  • Pour in the chopped tomatoes, tomato paste (if using), and oregano. Stir well to combine. Let it simmer for a minute or two.
  • Pour in the chicken stock and bring the soup to a boil.
  • Add the pasta and reduce the heat to low and let the soup simmer for 10 minutes until the pasta is cooked.
  • Stir in the beans and shredded cooked chicken and cook for an additional 5 minutes until the beans are tender. Season with salt and pepper to taste.
  • Ladle the soup into bowls and top with freshly grated Parmesan cheese.

Notes

    1. Tomato paste – Optional. Deepens the tomato flavor in the soup.
    2. Chicken stock – You can use either store-bought or homemade.
    3. Pasta – Small pasta shapes like ditalini, elbow macaroni, or even orzo work well.
    4. Shredded chicken – Use leftover chicken or grab a store-bought rotisserie chicken for ease.
