Creamy Salmon Gnocchi (One Pot)

One-pot salmon gnocchi. Creamy, comforting, and ready in 30 minutes. Tender salmon, pillowy gnocchi, in a simple dill and cream sauce.

Ingredients

  • 32 oz gnocchi (Note 1)
  • 4 salmon fillets
  • 2 tablespoon oil
  • 4 cloves garlic crushed
  • cup heavy cream
  • 1 cup chicken stock
  • ¼ cup parmesan finely shredded
  • 2 tablespoon dill finely chopped
  • salt
  • black pepper to taste
  • 1 lemon juice and zest

Instructions

  • Cook the gnocchi according to package directions (usually boiling until they float), then drain and set aside.
  • Pan fry the salmon in the oil over medium-high heat. Cook about 2-3 minutes per side until cooked through and golden. Remove from pan, take off the skin, flake into chunks, and set aside.
  • Fry the garlic in the same pan for about 30 seconds until fragrant.
  • Add the chicken stock and let it simmer for a couple minutes to reduce slightly.
  • Lower the heat, stir in the cream and bring to a gentle simmer.
  • Add the parmesan and stir until melted and the sauce thickens slightly.
  • Add the gnocchi, flaked salmon, and dill. Season with salt and pepper to taste and gently combine everything until heated through.
  • Remove from the heat and stir in the lemon juice and zest.

Notes

  1. Gnocchi: Use store-bought fresh gnocchi of your choice. DeCecco is my personal favorite.
Serving: Fresh green veggies on the side complete the meal. Broccoli, spinach, peas, or green beans are good options. I also recommend crusty bread to mop up the sauce and a glass of white wine. 
Leftovers: Salmon gnocchi tastes best when served fresh. It will keep in the fridge for up to 4 days and can be reheated on the stove or in the microwave. Feel free to add a little water or stock to revive the sauce if needed.
