    • Milk or coconut cream any type of milk is fine, you just need a small amount to make the nice cream a little thinner if needed.

    🍌 How to freeze bananas:

    Peel the bananas and slice them into 1 cm or ½ inch pieces. Then put a sheet of parchment paper on a tray or plate and add the banana pieces. Ensure that they are not touching. Then freeze them for a minimum of 2 hours. Use the frozen banana immediately, or place the pieces into a freezer bag and return them to the freezer for later.

    1. Make the candied walnuts

    Place a frying pan on a medium to high heat and add butter or coconut oil. When the oil or butter is hot and begins to bubble, add the walnut pieces and cook for a few minutes until they begin to brown. Then remove them from the pan and place them on a sheet of parchment paper to cool, leaving space between them, so they do not stick together.

    Top tip: keep an eye on the candied walnuts, they can go from nicely brown to burnt very quickly.

    2. Make the nice cream

    Place the frozen banana pieces in a food processor or blender and blitz them until they are smooth. Then add the pumpkin puree, pumpkin spice seasoning (or ginger, nutmeg and cinnamon mix), maple syrup and salt and continue to blend until incorporated. Add the milk or coconut cream if the nice cream needs to be thinned out a little.

    3. Serve

    Serve immediately topped with the roughly chopped candied walnuts, or place into a container and freeze for later.

    ❄️ A note on freezing: freshly made nice cream has a similar texture to soft-serve. Nice cream can be frozen for up to 3 months, but it does not regain its freshly made soft-serve texture when defrosted. The texture is much firmer and closer to regular ice cream. Frozen nice cream takes a while to defrost. I recommend removing it from the freezer 15 - 20 minutes before you plan to eat it.

    2. Keep an eye on the candied walnuts - they will go from perfectly done to burnt very quickly.
    3. Serve immediately for a soft-serve texture - the nice cream will have a yummy whipped soft-serve consistency when you serve it straight away. Frozen nice cream has a firmer texture. You can freeze the nice cream for up to 3 months, but remember that you will only get the soft-serve consistency with a fresh batch.

    Description

    A quick and healthy pumpkin spice banana nice cream recipe packed with delicious fall flavours. With a crunchy maple candied walnut topping.

    Ingredients

    Pumpkin Spice Nice Cream

    1. 4 bananas sliced and frozen (300g or 10oz)
    2. 230g (or 1 cup) pumpkin puree 
    3. 2 tbsp milk, almond milk or coconut cream
    4. 2 tbsp maple syrup or honey
    5. Pinch of sea salt
    6. 1.5 tsp pumpkin spice or ½ tsp ground cinnamon, ¼ tsp ground nutmeg, and ½ tsp ground ginger

    Maple candied walnuts (optional)

    1. 2 tsp butter or coconut oil
    2. 30g (or ¼ cup) walnut pieces 
    3. 2 tsp maple syrup 

    Instructions

    Note that this recipe requires frozen bananas. If you need to freeze room temperature bananas, make sure you do so at least 2 hours before you make this recipe.

    Prep the candied walnuts:

    1. Place a frying pan on a medium to high heat and add the butter or coconut oil.
    2. Add the walnut pieces and maple syrup or sugar when the butter or oil starts to bubble and cook for a few minutes until the sugar or maple syrup melts and is caramelized.
    3. Remove from the pan from the heat and place the walnuts on a piece of parchment paper, ensuring there is space between them, so they do not stick together. Leave them to cool while you make the nice cream.

    1. Place the frozen banana pieces in a blender or food processor and blitz until smooth.
    2. Add the pumpkin puree, maple syrup, pumpkin spice or cinnamon, nutmeg and ginger and salt and blitz quickly until incorporated.
    3. Add milk or coconut cream if you need to make the nice cream a little thinner.
    4. Serve immediately topped with the roughly chopped candied walnuts, or transfer to a container and freeze for up to 3 months.
